Alternative names: Beta Vulgaris

Origins:  1840, developed from the Crapaudine beet, chosen for its foilage color.

Characteristics: Very sweet.  Very dark purple in color, which is also used as a natural food dye.  Very red foilage.  Young beets (2-3″ in size) are very sweet in salads although larger/older are often used more for garnish or for ornamental uses.  Leaves are edible.
